If OP had been rated 1800 (for example), I'm guessing there would have been no confusion. We would have known what he meant.

Maybe he meant the King is very much alive but chilling on the other side of the board with no will to be part of this deadly 'chess' game.

In which case is it possible to only mate with a knight and a rook? No I don't think it's possible to force the opposite king on a corner but it's certainly possible to mate this way for instance, if the opponent helps you: lichess.org/analysis/k7/3R4/2N5/8/8/8/8/7K_w_-_-_0_1?color=white

Moral of the story the king has to stop drinking or he will be drawn to death.

it is possible but you don't even need the knight.
In some cases you need the King just in order to waste a tempo. So not to help to incarcerate but rather a tempo gainer/loser.
To answer the question: I think no.

There is only one mate possible: Arabic mate in the corner. And this cannot be forced. The King simply doesn’t go there.

PS: maybe you cannot force the k in the vicinity of your own King but that’s a different story.
Yes You can do if the opponent plays the wrong move of king
